EVOL Veggie Fajita Burrito knocked my socks off, so naturally I wanted to try more varities. Unfortunately, my grocery store only offers up two varieties of Evol's lovely creations, so the only way to mix things up was to test out the EVOL Shredded Beef Burrito.
I'm not exactly a huge beef eater, but this burrito was packed full with shredded and wonderfully tender beef. But shredded beef isn't the only thing that goes into this flavorful filling - you will also see (and taste) tender pinto beans, al dente rice, stringy monetary jack and cheddar cheese and crunchy roasted corn. These components are nestled within a tender and doughy tortilla. The tortilla is soft, for the most part, but it did have some hard portions on the ends where the tortilla had been folded (per usual with microwavable frozen burritos). I served mine up with a knife and fork and some crunchy, steamed broccoli, however, it is a very sturdy creation that would be great to take on the go.
I stumbled across a pink and white wrapper the other day in the frozen burrito area of my grocery store and after glancing over the plethora of information that adorned the simple packaging, you would have thought I stuck gold in the form of an EVOL Veggie Fajita Burrito.
What attracted me most was the 70% organic, vegan ingredient list. The burrito itself is an organic whole wheat tortilla with tons of veggies, organic rice, organic black beans and salsa. As is customary when microwaving burritos, some areas where the tortilla was folded over will be slightly hard and some areas will be slightly softened. If you want to avoid this, utilize one of the other advised cooking methods (unfortunately, a microwave is all that this college girl has). The filling has a nice, southwestern flare with a thorough flavor and appealing texture that compliments the burrito very nicely thanks to the crunchy corn, smooth beans, al dente rice and robust salsa.
