Cucumbers Review
I am a confessed snack-a-holic and I'm the worst kind because I have no self control - I will devour a bag of chips in 2 days maximum! I don't keep chips and other junk food in my apartment - I couldn't even if I wanted to, because I would eat them all - all day, everyday! So I have been searching for some tasty, healthy substitutes. That's when I remembered the good old cucumber! It's always in the supermarket - year round, and it's always pretty cheap - between $0.50 - $0.75 for a large size!
The best things about cucumbers has to be the nutrition. One medium sized cucumber only has 24 calories! There are also 0.3 grams of fat, 4 mg sodium, 2.8 grams of sugar, 1.4 grams of fiber (4 total carbohydrates for you low carb folks), and a little calcium and potassium too! The naturally low caloric count is due to the fact that cucumbers are 90% water. Even if you eat more than 1 for the day - you're still under 50 calories - I think I'm in love!

I peel the length of the cucumbers with a knife (or vegetable peeler) and then slice it across the width to get gorgeous, thinly sliced circles. Then I add these to a container that has about a cup of water with about 2 tablespoons of salt dissolved. I mean cucumbers on their own are nice, but salty cucumbers are divine! And no - I don't de-seed the cucumbers.
