I may be one of the few who likes tomato soups, so I followed the microwave directions and eagerly spooned it up.
I was surprised by how thick the tomato soup base was - it almost reminded me of pasta sauce rather than broth. While there was a decent amount of pasta and potatoes, the other vegetables were not plentiful and lacked vitality in the overwhelming tomato soup. Actually, to get a spoonful that resembled the picture on the bowl, I would have had to spend a lot of time fishing for vegetables. I wasn't wowed by the soup, but it was good enough considering I bought a 14 ounce bowl for $1.50.
A 1 cup serving of Healthy Choice Minestrone Soup provides 200 calories, 20% of the daily value for sodium and 21% of the DV for fiber. There is also 30% of the DV for vitamin C and 15% for iron.
I don't think I would buy this regularly, but the price is very reasonable, and it is one of the lower sodium content soups, so I would definitely use it as a base for a heartier "home made" minestrone soup.
