Silk PureCoconut Original Coconut Milk

I grew up drinking coconut water from street vendors in Jamaica - chopped with a machete right in front of you, and then cut in half once you were finished drinking, so you could scoop out the coconut jelly and eat it ... oh memories. I also grew up using coconut milk in dishes like rice & peas, but that usually came in a can. My how times have changed - I've seen a few companies starting to sell half-gallon containers of CoconutMilk, and it seems that people are using it in many more ways. It's been on my agenda to try for a while, and I finally got around to it when I purchased Silk PureCoconut Original CoconutMilk.

I was probably biased against liking this product - but it totally surprised me! The taste is pleasant with the characteristic aroma and flavor of coconuts - totally authentic. I had it by itself and I would much prefer to drink Silk PureCoconut straight than either rice or almond milk. But I must confess, while the 1st thought that popped into my head was how good this was, the 2nd and following thoughts were all about what kind of liquors this would go well with! And for the record - clearly mixing it with Kahlua is the obvious choice, but I think this is going to make some stellar mixed drinks.

But back to foods! I also hooked up my morning cereal (a mixture of Kashi Heart to Heart Warm Cinnamon Oat Cereal and Chia Goodness Apple Almond Cinnamon Cereal), with this coconutmilk and it was amazing - both the combination of cereals and with the addition of coconutmilk.

There is only one thing that's stopping this from taking over from Blue Diamond Almond Milk as my regular "dairy alternative milk" and that's the amount of saturated fat. Each 1 cup serving of Silk PureCoconut Original CoconutMilk provides 80 calories, 5 grams of total fat (8% of the daily value), all of which is saturated (25% of the DV), no fiber, 1 gram of protein and 6 grams of sugars. There is also 50% of the DV for vitamin B12, 45% for calcium, 25% vitamin D and 10% of the DV for vitamin A.

And yes, I know it's medium chain fatty acids which aren't supposed to be as bad as the sat. fats found in meats (long chain fatty acids), but I'm not convinced that there is enough research out there to back this up. The ingredients are all natural coconutmilk (filtered water, coconut cream), evaporated cane juice, calcium carbonate, natural flavor, dipotassium phosphate, xanthan gum, carrageenan, guar gum, cyanocobalamin (vitamin B12), vitamin A palmitate, vitamin D2. I have to say - they add a whole lotta stuff to this "all natural coconutmilk."

A half-gallon container of Silk PureCoconut Original Coconut Milk cost $2.99 on sale when I bought it, regular price $3.79. I would buy this again, as it's low in calories, economical and since I'm not going to be having more than 1 cup daily, the saturated fats shouldn't be too much of a problem when I'm eating right. Oh and I like how "coconutmilk" is one word - probably to get around the dairy industry trying to get the USDA to stop companies from using the word "milk" for non-dairy beverages ... but that's just the food science geek in me speculating.
