Velveeta is one of those foods that you either adore or loath with a passion. Personally, I've loved the stuff since I was a child. For years, it's been my creamy "cheese" staple for macaroni and cheese, con queso dip, or simply melted on broccoli. While the food snob in me wants to renounce it in favor of actual cheddar, the child in me decided to try the Kraft 50% Less Fat Light Velveeta Cheese.
I decided a chip dip would be the simplest way to try my "cheese product." Using a large microwavable bowl, I nuked a few chunks until I had a smooth, thick, melted cheese concoction. I added a little hot sauce and dipped a chip in hungrily. It tastes just like regular Velveeta! Salty, cheesy, creamy - nothing like real cheese, but hey, I wasn't expecting it to. I did notice that the light version takes longer to melt, and for macaroni and cheese, I needed to add extra milk to it. However, I don't see why this wouldn't work for any recipe that calls for the orange block.
A 1 ounce serving of Kraft Light Velveeta Cheese provides 60 calories, 3 grams of total fat, 2 grams of which is saturated, 18% of the daily value for sodium, 2 grams of sugars and 5 grams of protein. The ingredient list is long, unpronounceable, and full of enough stabilizers to fill an EMS helicopter and the sodium is shockingly high for a small square of cheese.
I bought a two-pound block for about $5.00, and while I'll still keep this in my fridge for trips down memory lane, I'll be turning to real, actual cheese for my day-to-day use.
