Amy's Organic Fire Roasted Southwestern Vegetable SoupI bought Amy's Organic Fire Roasted Southwestern Vegetable Soup on a whim because I like to keep some canned soup on hand, making for the perfect addition to a quick lunch whenever needed. I was drawn to this particular variety because I do not like meat in my soups, nor do I enjoy creamy soups and (as delicious as they are) and I was growing tired of my regular stand in, Campbell's Select Harvest Vegetable Medley Soup.

Amy's describes this as, "Organic fire roasted corn, onions and green peppers are combined with fresh vegetables and black beans, and mildly seasoned with green chiles and Southwestern spices." I dug around and found my can opener one rainy day and the first thing I noticed was the copious amount of vegetables and the skins were left on the potatoes (I have never seen this before in a canned soup and it added such a great textural element). Carrots, beans, tomatoes, corn, onions, green bell pepper, celery ... they all hold their own while commingling perfectly within the bold broth, which had a green chili kick to it.

Furthermore, there is a bit of fat in this soup (courtesy of extra virgin olive oil), which gives the broth a slight creamy sensation within the mouth. However, my favorite part of this soup was the grill marks that appeared on each and every vegetable within the flavorful broth ... it tasted as though the vegetables had come straight from my grill outside and into my soup. So yum woohoo!

A 1 cup serving (half of the can) of Amy's Organic Fire Roasted Southwestern Vegetable Soup provides 140 calories, 4.5 grams of total fat & only 0.5 grams of saturated fat. There is also 28% of the daily value for sodium, 15% of the DV for fiber and 4 grams of protein. This soup is gluten free, dairy free and vegan. Plus the ingredients list couldn't be more straightforward.

I paid $2.12 for 1 can of Amy's Organic Fire Roasted Southwestern Vegetable Soup, which was an excellent bargain. I will undoubtedly purchase this grill fest again soon thumbs up
