Seapoint Farms Veggie Blends with Edamame
While in search of some frozen edamame, I came across Seapoint Farms Veggie Blends with Edamame and decided to test it out.
This veggie blend was unlike anything I had seen before. In addition to the edamame, there are also peapods, baby corn, shredded carrots, water chestnuts, bamboo shoots, and 2 varieties of mushrooms (flat/black and button-shaped/white). I decided to simply boil the vegetables to capture their natural essence. I didn't realize, though, that none of these vegetables really have a distinct flavor, and they turned out kind of bland on their own. Despite that, I bet that these veggies would be a great addition to a dish with the right spices.
Each 3/4 cup serving of Seapoint Farms Veggie Blends with Edamame provides 60 calories, 1 gram of total fat, 20 milligrams of sodium (1% of the daily value), 4 grams of protein and 8 grams of carbohydrates, including 3 grams of dietary fiber and 2 grams of sugars. It also provides 30% DV vitamin A and 20% DV.
A 16 ounce bag with about 5 servings cost $1.98 at Walmart Supercenter. While my prep of these veggies wasn't optimal, I still love the unique variety of Asian-themed vegetables, not to mention the fantastic nutrition facts. These veggies provide a great opportunity for creative cooking. There's even a tasty hotpot recipe on the bag.

OK so I never can figure this out.. when they say a 3/4 cup serving... is that when it's frozen or after it has been cooked?
not too pricey at all and low calories. adding a little spice should do the trick.
