Amys Low Fat Light in Sodium Butternut Squash SoupWhen I hear the words Butternut Squash Soup, I have visions of thick butternut squash blending with a bit of broth and spices to make a creamy, flavorful and smooth concoction. Unfortunately, Amy's Low Fat Light in Sodium Butternut Squash Soup definitely did not live up to my expectations.

My description of Amy's Butternut Squash "Light in Sodium" Soup can be summed up as, "butternut squash infused vegetable broth." The broth has tiny speckles of squash sprinkled throughout that provide a type of texture or graininess. Furthermore, the oil floating throughout the dish is a notable and slightly unappealing addition. While the flavor was not bad, the texture and appearance was way off. In the end, I dumped about 2/3 of the can down the sink (and I hate wasting food)! The folks over at GoDairyFree.com seem to like it, but I'm with Dr. Gourmet who said:

This is a pretty good soup but wouldn't be a first choice ... It is rich tasting and has a slight spiciness to it, but the soup is a little thin.

The nutrition panel is one of the main reasons why I purchased Amy's Organic Butternut Squash Light in Sodium Soup. One cup of soup (there are 2 in each can) contains 100 calories, 2.5 grams of total fat (4% of the daily value), no saturated fat, 290 mg of sodium (12% of the DV), 2 grams of fiber (6% of the DV), 4 grams of sugar and 2 grams of protein. The organic and all natural ingredient list is short and to the point (just how we like it).

I purchased Amy's Low Fat Light in Sodium Butternut Squash Soup on sale for $2.19. Next time I am in the mood for Butternut Squash Soup, I might use this as a base if I'm going to make it myself, otherwise, I will be sticking to the tried and true Pacific Natural Foods variety.

The boxed Butternut squash soups are pretty good. I think it's Pacific that has a butternut-ginger...yummy and the stats are good.

I actually like it when combined (aka dressed up) with low fat sour cream and some crumbled chips for crunch. :)

I agree with ibagoalie, the pacific butternut squash soup is much better!

I have to be in the mood for squash soup and my first choice is usually Amy's. Thanks for the heads up.
