Lean Cuisine Three Bean Chili
While perusing the frozen fruit section I ran into Lean Cuisine Three Bean Chili for $1 on sale. It was the only variety that cheap and since I had yet to try it, I made room in my tiny little freezer which happened to be crammed from my last trip to the grocery. It turned out to be a really good deal.
Each bite was warm and comforting, while the smell of peppers and spices is out of this world. The edges of my dish got a little hard; but after mixing thoroughly, it was indiscernible. The rice is firm, not mushy, and blends with bits of red pepper, onion, corn, various forms of beans, tomatoes and a sprinkling of cheese to create a truly enjoyable and fairly hearty meal. There is just enough flavorful tomato based sauce to make this a chili, not a soup or simple rice dish.
Each Lean Cuisine Three Bean Chili dish provides 270 calories, 7 grams of total fat (10% of the RDA), 2 grams of saturated fat (11% of the RDA), 620 mg of sodium (25% of the RDA), 8 grams of fiber (33% of the RDA), 8 grams of sugar and 9 grams of protein. Unfortunately, the rice is not whole grain and the sodium count is something to be aware of. Otherwise, I would give Lean Cuisine Three Bean Chili two thumbs up instead of just one.
I chose to eat this as a mini-meal because I am not sure that 270 calories would take me very far. Then again, all of those beans (black, dark red kidney and pinto to be exact) might last you longer than you would think.

Man, why have I never seen this type? Now I really want it. I love Chili, but making it at home means large batches, which is bad when there's one of you to feed!
I love this meal! It actually surpasses my previous fav mexican-style meal, WW Smart Ones Sante Fe Rice and Beans, though not by much.
