Campbell's Healthy Request Minestrone Condensed Soup

Campbells Healthy Request Minestrone Condensed SoupNormally I'm not drawn to soup because of the high salt and sometimes high fat content, but this Campbell's Healthy Request Minestrone Condensed Soup seems to defy common soup stereotype. The label claimed that the soup is 98% fat free and has 50% less sodium, so I was willing to try it.

I prepared the soup as instructed by microwave and was pleasantly surprised to find that the tomato-tinged broth actually wasn't too strong or excessively salty. The solid components included potatoes, pasta, and various beans and vegetables and were the highlight of the soup, which were tender and flavorful with the broth. The soup is hearty enough to be a meal by itself, but it would also be a wonderful side to another meal.

One 1/2 cup serving is 80 calories, only 0.5 gram of fat, which is not saturated, and no cholesterol. Each serving has 480 milligrams of sodium (20% DV), but if you consume the whole can, you would be getting a whopping 50% DV. In addition to 580 milligrams of potassium, there are 15 grams of carbohydrates per serving, including 3 grams of fiber. There are also 3 grams of protein, 30% DV vitamin A, 4% DV calcium, and 6% DV iron. This ingredients list hits all the right notes.

A 10.5 ounce can of this soup normally costs $1.49 at Kroger. I'm still a bit wary of salt content in the soup, but this soup is an improvement from most soups. I loved the variety of beans, vegetables, and fiber, which are the main reason why I would buy this soup again.

The salt content is always way in in the 'reduced sodium' soups. I did find a brand (healthy harvest or something like that)which has no salt added, and so only has 1% or so per serving. You can add what you want and save a ton!
