Uncle Wally's Smart Portion Blueberry Muffin

Uncle Wallys Smart Portion MuffinsWe are huge fans of Uncle Wally's Muffins here on Iateapie. When I recently learned that Uncle Wally felt the need to reformulate his already stellar muffins in an attempt to tweak the recipe, add more fiber and wrap the muffins individually - well, I was a little concerned. They were already perfect as far as I was concerned.

I should have known Uncle Wally knew what he was doing, because the first thought that came to my mind after taking a bite of Uncle Wally's Smart Portion Blueberry Muffin was, "How in the world do they make a muffin this dense and moist with barely any fat ... and no saturated fat?!" Each muffin is small, yet satisfying (especially for a mere 80 calories). I would estimate each oat topped, blueberry speckled muffin to be a smidgen of a bit smaller than a tennis ball (or the size of a regular, homemade muffin).

I tried the muffins before they were reformulated (2 small individually wrapped muffins) and I am grateful for the even denser, wholesome baked treat that Uncle Wally has recently come up with. The blueberries are certainly present and there are quite a few. These baby muffins are scrumptious and embody an enjoyable treat.

Each 32 gram muffin has only 80 calories, 0.5 grams of total fat and no saturated fat, 135 mg of sodium (6% of the RDA), 2 grams of fiber (8% of the RDA), 9 grams of sugar and 4 grams of protein. The ingredient list starts with whole grain wheat flour, sugar, water, egg whites, blueberries, nonfat dry milk ... and then some other things you may need a food scientist to explain to you (but it's not too long and there is no trans fat).

I paid only $1.50 for a box with 8 Uncle Wally's Smart Portion Blueberry Muffins on sale at Wal-Mart (and I'm hoping they are still on sale the next time I go back). If you are not in the mood for muffins, then try Uncle Wally's Smart Portion Oatmeal Raisins Cookies.
