Libby's Canned Pumpkin

Libbys Canned PumpkinAutumn is here, and along with all the great clothes, changing leaves, and fun festivities, comes great Fall flavors. What I get the urge to eat anything pumpkin! This flavor lends itself to many classic dishes, both sweet and savory, along with healthy and well ... some not so healthy eats (damn you pumpkin pie)! Still, most of these dishes couldn't be created if it wasn't for the wonderful Libby's Canned Pumpkin.

This stuff is awesome. Cooking your own pumpkin can be time consuming and tedious, so having ready-to-eat pumpkin in a can is a miracle in my book. It makes cooking anything with pumpkin faster and simpler. Plus, it is delicious and full of pure pumpkin flavor! Libby's says, "Our 100% Pure Pumpkin is exactly that - with no additives or preservatives. We wouldn't want anything to interfere with our unique, delicious pumpkin flavor." I wholeheartedly agree.

Each 1/2 cup serving of Libbys Canned Pumpkin has 40 calories, only 0.5 grams of total fa with no saturated fat, 5 mg of sodium, 2 grams of protein and 9 grams of carbohydrates which includes 20% of the RDA for fiber (5 grams) and 4 grams of sugar. There is also has 300% of your vitamin A requirement. Pumpkin is a nutritional powerhouse in my book!

Libby's Canned pumpkin is a staple in my house year round, but I seem to buy and use so much more of it in the fall season, plus, this stuff is inexpensive too. It is usually on sale, but when it isn't I usually only pay around $1.40 for a normal sized can (3.5 servings). Like I said before, pumpkin can be used in so many ways .I eaten straight from the can, which is something I do quite often and never feel guilty about; I add it to my favorite dish (oatmeal) and even to my protein shakes. It is also a must for baking healthier cakes and cookies. In my opinion, everything tastes better with a little pumpkin (okay, maybe not everything, but pretty close)!

I couldn't agree with you more Sarah J. You already mentioned my favorite uses, so I'll just add that if you mix it with peanut butter, and pumpkin pie spice it makes a pretty good sandwich.

Imagine my delight when I sat down with my breakfast of pumpkin oatmeal and read your nice post all about the glory of pumpkin! You can even make pumpkin butter in the microwave with Libby's. I'm going to have to try that peanut butter/pumpkin sandwich idea!

Agreed! I make pumpkin muffins all the time, and, yea, it's delicious in smoothies and PB. Love it! And it's EASY! :)

It's one of my all time favorites year round! I also eat it straight from the can mixed with various things. Sometimes cinnamon and sweetener, sometimes sugar-free jam or maple syrup. Oh and and if you mix it with cottage cheese and suger free syrup you get an amazingly nutritious, protein packed, and most of all YUMMY snack that will never leave you wishing you had cake or pie instead. Sooooo good!

I've never tried it with peanut butter on a sandwich. Hmm... I'm gonna have to experiment on that one!

I adore Pumpkin, eat it year 'round just like you. I can eat it straight out of the can too. I have been making a fatfree/sugarfree (Splenda sweetened) crustless pumpkin pie made with Eggbeaters and Low fat Vanilla Almond Breeze. OMG, so good!

I love pumpkin, too. Breads, muffins, pies, puddings, pancakes, pasta sauce, soup, risotto - the list goes on and on. It's so versatile, unique, and tasty. I usually buy it in large cans, divide it into half-cup portions in a muffin tin, and freeze it. A perfect portion whenever I need it!

Oh oh! Can I have the recipes too? They sound awesome!

I was just thinking to myself - I wonder if they will review Libby's canned pumpkin! It's like you read my mind.

This is also a favorite around my house. I tried making pumpkin puree with my own pumpkin but it was rather stringy and not as smooth.
