Lean Cuisine Salmon Mediterranean

Lean Cuisine Salmon MediterraneanIn the past, I've had pretty good luck with Lean Cuisine's Spa Cuisine series (the Butternut Squash Ravioli is amazing), and the Lean Cuisine Salmon Mediterranean also knocks it out of the park. The front of the box describes the entree as "wild salmon with zucchini, peppers & whole grain pasta in a garlic tomato sauce."

After microwaving it within the recommended time range, the salmon looked like it was cooked just right, and I was ready to eat. I really liked that there was an abundance of vegetables in addition to the whole wheat pasta (vermicelli). Although the box blurb doesn't mention it, there are lots of black olives in the mix too, which I guess is why it's called Mediterranean. The salmon had a nice flaky texture, and the pasta was cooked appropriately. The sauce was pleasant as well although I'm not sure if a tomato sauce is really Mediterranean style.

The front of the box also mentions that this entree is an excellent source of omega-3 fatty acids because of the salmon. In fact, according to a graphic on the back of the box, there is more than 100% daily value (DV) of these particular fatty acids, which is good for a healthy cardiovascular system.

A box of Lean Cuisine Salmon Mediterranean provides 230 calories, 4 grams of total fat and 1 gram of saturated fat (4% and 5% of the RDA), no trans fat, 25 mg cholesterol (7% of the daily value), 28% of the RDA for sodium (660 mg), or 28% DV, 18 grams of protein and 30 grams of carbohydrates, of which 3 grams are dietary fiber (15% of the RDA) and 3 grams are sugars. Frozen dinners typically have quite a bit of salt, but I think this one skews towards more than the average.

I paid $2.20 for this entree when it was on sale at Kroger. I really liked the salmon, both for its taste and the plentiful vegetables. This will definitely be on my shopping list from now on.

I love that they've added salmon to their line. It's so good for you!!!

When you cook it though does it smelly really fishy? I don't want to be the chick who made the lunchroom smell like fish, ya know?

The smell of the dish was more tomato-y than anything else. It was great!

Great review! I was surprised to see only 4 fat grams, considering that salmon is pretty high in fat.
