Amys Vegetable Lasagna

Amys Vegetable LasagnaWhen I was in the mood for a home cooked comfort meal, but not in the mood to actually cook, I went on a search through my freezer and found Amy's Vegetable Lasagna - not to be confused with Amy's Tofu Vegetable Lasagna (which was previously reviewed) - yes we don't understand why have 2 different products that are essentially the same thing either.

I stuck mine in the microwave for 6 minutes and it was perfect! After removing the plastic covering, I was enticed by the crispy edges and pungent red sauce. Unfortunately, a blob of mozzarella cheese was melted in the middle of the dish and when I tried to eat it, the stringy cheese came off in one fork full. After plucking that off, I dug in! The noodles were perfectly al dente and organic zucchini, spinach, onions, ricotta cheese, etc. was layered throughout. Each bite is smooth from the ricotta, yet full of texture from the vegetables! Unlike the picture on the box, the sauce was only on the top of the pasta and not layered throughout, but each bite was so flavorful that it was not missed! The fact that it is not smothered in sauce or a bunch of gooey cheese is actually very appealing because it allows you to notice each wholesome, organic ingredient on the list.

A box of Amy's Vegetable Lasagna has 310 calories, 12 grams of fat and 4.5 grams of saturated fat (19 and 24% of the RDA), 28% of the RDA for sodium (680 mg), 16 grams of protein and 35 grams of total carbohydrate which includes 5 grams of sugar and fiber (20% of the RDA). Furthermore, each tray of lasagna offers 50% of the RDA for Vitamin A, 15% for Vitamin C, 25% for Calcium and 10% for Iron.

Amy's uses organic and wholesome ingredients but the fat and sodium content are really high, which doesn't make it diet friendly. I paid $2.00 for Amy's Vegetable Lasagna, which was a major sale! It is a very filling dish (I had to leave a few bites behind), so it could also feed two for a light dinner if you paired it with a crisp romaine salad! A lower calorie / fat option is Lean Cuisine Cheese Lasagna with Chicken Scaloppini, but then you lose the organic ingredients.

I will have to check this out. I wish I was much better at cooking, currently my repertoire is limited to eggs, toast, and quesadillas.

I am going to try these. Any "Amy" product that I have tried has been good. Love the enchiladas.good review!

I LOVE these! I've tried lasagna by several other brands, but this one is unique and delicious. I love the veggies in it and the slight amound of cheese on top is perfect.

it is the best... my vegan daughter and i just tryed it for the first time and we are HOOKED!!!!!
