I love it just out of the can. Sometimes I use it as a sandwich spread with some PB and pumpkin pie spice, then grill it.

As for fresh pumpkin, there's a fabulous Thai dessert where you boil some chunks or slices of pumpkin with sweet coconut milk... ooh, the delicious comfort...
