Lean Cuisine Salmon with Lemon Dill Sauce

Lean Cuisine SalmonA frozen dinner with real salmon? Thank you Lean Cuisine! I have been trying to incorporate regular portions of fish in my diet weekly, and I hope by now that everyone has heard that fish is rich in omega-3 fatty acids - which is what I call brain food. My 'fish of choice' is salmon. I like the characteristic taste and the ease to preparation, but it is quite expensive (usually like $6 per pound) - and the Lean Cuisine Salmon meal is only about $2.50. It has "wild salmon medallions with a lemon dill sauce, whole wheat vermicelli, yellow carrots and broccoli." And there are no preservatives.

First, let me give you a warning about preparing this meal in the microwave - you can smell it from several miles away! Okay, I'm exaggerating a bit, but I wouldn't prepare this meal at work or in an office. It doesn't smell bad or stink - it just has a very strong, fishy odor that permeates the surrounding atmosphere.

Other than the odor, the taste is scrumptuous. I personally love the characteristic taste of salmon, which is not so strong in this version, and the lemon dill sauce is an EXCELLENT choice for this meal. It tastes like the sauce I make when I cook salmon - a light but slightly salty base. And there are plenty vegetables - nice crisp, fresh tasting broccoli and lots of yellow carrots.

The entire meal is only 240 calories, 6 grams of fat and 2.5 grams of saturated fat which is 10-12% of the recommended daily amount, 29% of the daily requirement of sodium (690 grams), 16 grams of protein and 30 grams total carbohydrates which includes 4 grams of fiber (17% of the RDA) and 4 grams of sugars. There is also 60% of the daily recommended amount of vitamin A and 20% vitamin C.

If you are watching your sodium intake be aware that the sodium in the Lean Cuisine salmon meal is high! I really enjoyed this meal and would definitely buy it again - I just wouldn't take it to the office for lunch.

I love this dinner too! Also, you must try the Salmon with Orzo (the one in the picture), I personally prefer that one to the Lemon Dill entree. Caution though: there is a fine line between cooking this dinner to perfection and nuking the salmon into chewy jerk!

Thanks for the review. I picked this up for my pre-evening class dinner tonight. Only about 5 Weight Watchers points! I may have a little salad too to fill me up. Keep up the good work!
