Amy's Tofu Scramble
Amys Tofu Scramble is made of a 'scramble' of small chunks of tofu with spinach, carrots, mushrooms and zucchini. There is also a side of hash browns and tomato slices. This meal is vegan and gluten free.
As I read the direction for preparation, I realised that in the conventional oven, it would take 45-50 minutes while in the microwave, it required about 4 minutes. Hmm ... decisions, hash browns do not fare well in the microwave, but I really didn't have the time to bake this in the oven. Oh well, I chose the microwave and was worse off for it. I knew the hash browns probably weren't going to taste good when nuked, and it didn't. It was a limp, soggy mess and I didn't bother to eat it. When I tasted the tofu scramble, it was a little bland, but did much better when I added a little salt to it. Even so, I thought that Amy's needed some more spices in this meal to make things a lot better.
Amys Tofu Scramble has 320 calories, 19 grams of fat which is 30% of the recommended daily amount, 3 grams of fat, which is 15% of the daily value, no trans fat, 24% of the RDA for sodium (580 mg), 19 grams total carbohydrate, 4 grams of fiber and sugar, and 19 grams of protein. There is also 40% of vitamin A and 30% of vitamin C and iron. Although there is almost 1/3 of the daily value of trans fat, it is mostly unsaturated or 'the good kind.'
Amy's brand products are not usually very cheap, and Tofu Scramble was $4.29. Hey, it costs to use natural and organic ingredients and no preservatives. I liked this product okay meaning it didn't taste awful, but it really wasn't too tasty either. It's a pretty good alternative for vegans and people who can't eat foods with gluten, but for us carni /omnivores, I don't think we'll be giving up scrambled eggs just yet. Although, after eating this and Amy's Indian Mattar Tofu, I think I am not as scared as I once was about tofu and might actually start making dishes with it.

also good is Amy's tofu scramble wrap. It was a little soggy but that may be because I too used the microwave.
I like the idea of Amy's (vegetarian, organic), but it's so darn expensive, and I feel like I can make it myself.
Normally I like Amy's but this entree is the exception to the rule. Bland and tasteless it isn't deserving of the Amy's name.
I'm not sure if I would try this, but I hear that Amy's products are good. Particularly the pies. Yum.
Amy's are fairly new to my supermarket. Thank you for reviewing these meals, I will have to try a few myself!!
I thought the tofu part was really good- so often tofu is really bland, or just salty and gross...this was pretty decent. The potatoes and tomato? A waste of calories and space in my opinion...inedible.
A side of tomato slices? That's supposed to go in the microwave?? Frozen tomato slices???
Okay, because of the microwave on hashbrowns warning I decided to oven-bake this (I have plenty of time, no life, heh). I've got it in the oven right now all covered in tin foil, and after I've consumed this meal I 'll be sure to post back and tell you if the hashbrowns are any better when made the long way.

That's really disappointing because Amy's tofu scramble pockets taste like heaven! I'd still love to try this product, and if I ever come across it I will make it in the oven. I've eaten Amy's pot pies, and they don't do well in the microwave but are delicious in the oven.
Ok, I ate those last night and am happy to report that the hashbrowns were not soggy at all. I very much enjoyed them. Although, the tomatoes unfortunatly were very soggy and did not give the flavor I expected, of hashbrowns with ketchup. When I reheated some of the hashbrowns in the microwave just to test, I found that they weren't as good somehow. Try cooking them the long way next time. I would have rated this meal a little higher, maybe 4.5 stars, because it makes a great breakfast, lunch, or light dinner.
I am sorry that this meal didn't go over to well with you. The Tofu Scramble is one of my favorites! The flavor of all the veggies with the scrambled tofu is just perfect. I like to mix it with the hash browns - and I don't mind that they don't come out crispy. This is a great breakfast and you really get A LOT of food! Yummy!
Im surprised that so many people didn't like this, because i love it.
However there are a few things that i have found that improve it... i microwave it longer than called for, sure to mix it around alot, to kind of "dry out" the tofu a bit (it seems to help concentrate the flavors). Even better is if i cook it, then leave it in the fridge overnight/ few hours and then reheat again (w/ plastic off).
I agree the potato and tomato aren't so great. I usually wrap it in a tortilla or pita and add any other veggies of my own.

Yeah, when you buy Amy's you're really paying mostly for convenience / organic-ness. To prepare it yourself takes more effort but it's worth it and people are lazy.
Secondly, I'm assuming you aren't a vegan. When you are a vegan in a world that isn't usually very vegan friendly, you're just stoked to find something that's faster to make when you don't have time and isn't loaded with a bunch of crap you can't (don't want to) eat. I have found all of Amy's products that I've tried (including a tofu scramble pocket, love) to be quite satisfying. Of course I can make every single one cheaper and better myself, but there are some days when time isn't allowing me that luxury.

I'm confused...I thought Amy's was all natural; why are there trans fats? And I didn't think that there was a "healthy" kind of trans fat!
Ignore the negatives above!!! This meal is great!!! Love it! Yes, Amy's is expensive. I would like to crack this recipe and make it myself. Please everyone give it a try. Even you tofu phobes out there!
This is actually my favorite Amy's meal - I'd give it 5 stars if not for the price.
A little tip with Amy's tofu scramble: ketchup. Put a little ketchup on it and it is fabulous! Trust me.
