LightLife: Smart Bacon (Meatless)

Smart bacon Since that Morningstar Farms Veggie Bacon Breakfast Strip fiasco, I have been very hesitant to try another 'meatless bacon' product. From the comments, it seems like there are quite a few people who loved the Morningstar Farms Veggie bacon, but I stand by my statement that I thought this was a horrible cardboard tasting mess! For those of you who loved MStar, let me introduce you to Smart Bacon. It is so much better!

Smart baconNow, from the looks of it, it does not resemble bacon in the least, which left me full of doubt that this would actually taste like bacon. Then, I had kept it in the freezer, and it was all stuck together. I tried running hot water over it to loosen the pieces, but this only helped me tear apart small bits and pieces of the 'bacon', and I couldn't get one long nice strip. So note to other potential users - keep it in the refridgerator, not in the freezer!

Smart baconWhen I cooked it on the skillet, it actually slightly resembled real bacon, much better than in the uncooked state. When I tasted it - well, it didn't really have a bacon taste - but it was nicely flavored, and quite tasty. BUT, let me repeat, it doesn't resemble the taste of real bacon. Still, I liked it, and it tastes good on its own, but may be better as a component of a sandwich.

A serving size is 2 strips which has 45 calories, 2 grams of total fat, no saturated or trans fat, 350 mg sodium (15% of the recommended daily amount), 1 gram of fiber, 1 gram of sugar (1 gram carbohydrates for you low carb folks) and 6 grams of protein - excellent nutrition (although I would have love to see a little bit of vitamins or minerals too). Smart Bacon costs about $3.50 for a pack with about 13 strips. I would definitely buy this again - when I get out of grad school and get a job - otherwise, it's a bit expensive for me.

Looks quite nasty to me! I would still try it though- I would never judge a book by its cover! What did you cook it in? (Butter, oil...what?)

I cooked the bacon using a wee bit of oil in a skillet. Don't use a lot. Also, don't eat too much of this - more than 2 slices and it just starts tasting awful.
