Cucumbers
I am a confessed snack-a-holic and I'm the worst kind because I have no self control - I will devour a bag of chips in 2 days maximum! I don't keep chips and other junk food in my apartment - I couldn't even if I wanted to, because I would eat them all - all day, everyday! So I have been searching for some tasty, healthy substitutes. That's when I remembered the good old cucumber! It's always in the supermarket - year round, and it's always pretty cheap - between $0.50 - $0.75 for a large size!
The best things about cucumbers has to be the nutrition. One medium sized cucumber only has 24 calories! There are also 0.3 grams of fat, 4 mg sodium, 2.8 grams of sugar, 1.4 grams of fiber (4 total carbohydrates for you low carb folks), and a little calcium and potassium too! The naturally low caloric count is due to the fact that cucumbers are 90% water. Even if you eat more than 1 for the day - you're still under 50 calories - I think I'm in love!
I peel the length of the cucumbers with a knife (or vegetable peeler) and then slice it across the width to get gorgeous, thinly sliced circles. Then I add these to a container that has about a cup of water with about 2 tablespoons of salt dissolved. I mean cucumbers on their own are nice, but salty cucumbers are divine! And no - I don't de-seed the cucumbers.

Don't forget about the so-old-its-set-for-a-comeback dieting standby: celery. When you absolutely have to have crunch and saltiness (they are naturally salty, but that doesn't stop me from sprinkling more on...). :-)
I'm trying to get into eating more veggies - I can't say I'm a big fan of celery, but just for you MissTenacity, I'm going to be trying some more of it :0)
Here's another way to make them:
Peel, deseed (with a melonballer) and cut into large dice. Throw in a bowl, and pour about 1/2 cup of vinegar on them. Add about a teaspoon of sugar or Splenda. Add a few sliced green onions and some fresh ground pepper. Give it a shake and let marinate a few hours. Eat them plain or toss them on salads. They are delicious and last forever.

I'm definitely going to try your recipe Peggasus - I must admit I went a little bit crazy after finding out about the low calorie content and now I have quite a few cucumbers laying around!
Oh yeah, cukes are great stuff. I like 'em in turkey sandwiches, as a somen salad topping, as asian pickles (salt, sugar, rice vinegar, garlic), and as a sauce for curried fish (cubed cukes w/ yogurt, green onion, salt).
Yeah, salty cucumbers are definitely the way to go. obviously too much salt is not great but the pay off in taste is worth it
Toss with Breakstones Light Sour Cream, lots of dill, salt and pepper. Yummm!
