Lean Cuisine Cheese Lasagna with Chicken Scaloppini
I don't have lasagna too often and I haven't before seen a frozen lasagna meal. I really didn't know what to expect. For one thing, I am not a fan of tomato paste. I'm the person who calls the pizza place (the few times that I actually order pizza is what I meant to say, because it's unhealthy and I wouldn't ... okay?!) but the one time in my entire life that I ever ordered pizza, I asked for light sauce. So I was really apprehensive about trying this.
I'm glad I did though because it was delicious. Lean Cuisine says this is meal is 'chicken breast scallopini topped with a robust tomato sauce accented with basil, onion and garlic, served with hand-layered three-cheese lasagna rich with ricotta, romano and parmesan cheeses. But I just call it 'good!' The tomato sauce did not overpower the other flavors like I expected, and the cheeses gave it that extra uumph every time you you got a bite. It was typical good lasagna. Adding the chicken breast made this meal very filling. The breaded chicken was flavorful, but got a bit soggy after being microwaved, but not so much that you couldn't eat it.
The best thing about this meal was that it was so filling! It provides 290 calories, 18 grams of protein, and 8 grams of fat, but only 2 grams is saturated fat. The sodium content is a bit high at 610 mg (25% of the recommended daily amount), and there is 760 mg of potassium (22% of the daily value). At $2.50, I will be enjoying this frozen dinner many more times.
