Galaxy Veggie Slices Veggie Slices is the vegetarian 'soy' version of cheese. I should begin my review here by stating that I love cheese and I have a close friend who brings me the 'real thing' from the holy land: Cheese from Wisconsin. Yes, I'll admit that in terms of cheese, I'm definitely a spoiled brat(wurst), but, as I was required to change a few (all) things about my lifestyle, then I had to make some, er, substitutions.

I tried three of the types of 'veggie cheese' made by Galaxy Nutritional Foods, including cheddar, swiss and mozarella. At first I ate it straight from the wrapper, and I'll be frank, my initial impression was less than appreciative. I found the cheddar to be palatable, but just, the mozzarella was somewhat less than that, and the swiss was ... well, nasty! HOWEVER, let me point out that the packaging states that it "Melts Great!" and it truly does, better than other soy "cheese" I've tried. The real secret to this product, in my humble opinion, is to include it IN something. Melt it over a big whopping bowl of vegetarian chili or simply melt it on top of a good ol' Gardenburger.

Each serving is 1.5 slices -weird- which have 6 g protein, ZERO saturated fat, 2 g monounsaturated fat, and 1 g polyunsaturated fat, and so its definitely a healthier choice over (quite tasty) original real cheese. And let's not forget those good for you isoflavones, at 2 mg per slice! Anything to potentially lower that cholesterol, reduce cancer, reduce risk of heart disease, improve bone health, and help the ol' prostate (or if you are female, ease menopause symptoms), right?

It's a bit more costly to buy this product than your average package of American cheese slices, but I think it's worth the extra buck or so for the extra benefit to yourself in the longer run and prevent the price of a hospital stay.

I should point out to all those strict vegans out there (who don't want any ingredients in their food derived from animals) that this 'veggie' product (and most other types of soy cheese) contain caesins which is milk protein. Overall, despite my initial negative opinion of this product, I now keep a supply of both the Cheddar and Mozzarella in my fridge for use in those fly-by-the-freezer meals I'm so fond of concocting.

The pepper jack is the BEST! But of course it is always best melted with something... Love the grilled cheese... warm, gooey delicious!
