Lean Cuisine Salmon Mediterranean
In the past, I've had pretty good luck with Lean Cuisine's Spa Cuisine series (the Butternut Squash Ravioli is amazing), and the Lean Cuisine Salmon Mediterranean also knocks it out of the park. The front of the box describes the entree as "wild salmon with zucchini, peppers & whole grain pasta in a garlic tomato sauce."
After microwaving it within the recommended time range, the salmon looked like it was cooked just right, and I was ready to eat. I really liked that there was an abundance of vegetables in addition to the whole wheat pasta (vermicelli). Although the box blurb doesn't mention it, there are lots of black olives in the mix too, which I guess is why it's called Mediterranean. The salmon had a nice flaky texture, and the pasta was cooked appropriately. The sauce was pleasant as well although I'm not sure if a tomato sauce is really Mediterranean style.
The front of the box also mentions that this entree is an excellent source of omega-3 fatty acids because of the salmon. In fact, according to a graphic on the back of the box, there is more than 100% daily value (DV) of these particular fatty acids, which is good for a healthy cardiovascular system.
... continue reading »Chicken of the Sea Salmon Fillet in a Honey BBQ Glaze
After having such a positive experience with the Chicken of the Sea Salmon Fillet in the Mandarin Orange Glaze [read the review], I was anxious to try another variety, so I chose the Salmon Fillet in a Honey BBQ Glaze.
BBQ sauce is not something that I relate to salmon, so as I opened the "flavor-fresh pouch" and slid the salmon out, I was slightly apprehensive to say the least. The so-called "Honey BBQ Glaze" DID NOT LOOK ANYTHING LIKE THE PICTURE (my biggest pet peeve about product merchandising)! Honestly, the glaze reminded me of the gelatinous, lumpy gravy that they serve in really bad buffet restaurants.
I nuked the salmon for 40 seconds to heat the fillet. A word to the wise when heating the salmon: COVER IT! The BBQ Glaze has the innate ability to splatter onto every square inch of the microwave if left uncovered while cooking! Had the salmon been deliciously good, I could have overlooked the jelly-like BBQ sauce. However, this was not the case. The BBQ Glaze was very sweet and left a funny aftertaste in my mouth. The actual fillet was... okay, and if there had been none of this Honey BBQ Glaze, I dare say it would have been quite good.
... continue reading »Chicken of the Sea Salmon Steak in a Mandarin Orange Glaze
If were to be stranded on a deserted island, left only with a life supply of one item of food, salmon would be it. I ADORE salmon: sushi, canned, steamed, any-which way. But the price of the delectable fish for one on a broke college student's budget can sometimes be a challenge. So when I spotted the new Chicken of the Sea Salmon steaks at the store I was really excited to give them a go.
There are 3 new varieties: one in a Honey BBQ glaze, one with a Roasted Garlic Glaze, and a third in a Mandarin Orange glaze. I opted to try the Mandarin Orange glaze with the intention of serving it with brown rice and veggies. The steaks are precooked so it only requires heating in the microwave, and they come in a flavor fresh pouch consisting of one 4 ounce-ish portion of steak per pouch (an AWESOME attribute in our world of out of control serving sizes!)
When I opened the pouch up and slid the salmon steak out, I was pleasantly surprised with 2 things: First off, the salmon steak actually looked like the image on the front of the pouch! And second, I was greeted with a wonderful aroma of the orange mandarin glaze. To make my salmon steak into a meal, I first cooked a half cup of brown rice with some steamed broccoli and carrots. Then I topped the rice with the salmon steak and poured the Mandarin Glaze that remained in the pouch over the salmon and rice and nuked it in the microwave for about 45 seconds to heat the salmon steak through. (CAUTION: because the steaks are precooked, they do not require that much time in the microwave so be careful not to overcook it). Also, to add some texture to my "Mandarin Salmon Bowl" I toasted some slivered almonds and sprinkled them on top.
The result ...pretty darn good! The salmon steak had a sweet, orangey taste to it, and the glaze was quite good. I highly recommend serving the steak with rice and pouring the excess glaze over the rice because it absorbs into the grains and makes the rice taste super good. My only complaint, and it is one of personal preference, is that I like my salmon to be raw, rare, or medium rare and the salmon steak was definitely well-done which is logical for shelf-life.purposes
... continue reading »Sojo Pan Asian Salmon Cakes
Sojo Pan Asian Salmon Cakes are made with wild Alaskan salmon and seasoned with teriyaki sauce, bread crumbs, veggies like red bell peppers, zucchini and other seasonings. They are also made with no additives or preservatives. The taste is very flavorful although I didn't experience as much of that characteristic "salmon" taste as you do with 'fresh' salmon filets.
The Sojo Salmon Cakes have to be thawed for 24 hours prior to cooking OR microwaved for 1 minute to thaw. The box has instructions for baking in an oven or how to saute in a frying pan which is how I cooked mine. On first try, I had the heat up too high, and with the burgers being thick - the outside was like a dark brown, crispy mess (okay, maybe burnt is a better way to describe it). On my second try - I had the heat turned down to about medium and I used a spatula to flatten the salmon cake immediately after I put it in the frying pan. I also flipped it often, so that by the time the salmon cake was thoroughly cooked (about 10 minutes), both sides had an even brown color.
Trader Joes Salmon Burgers
I don't eat beef, so I'm always on the lookout for something that can be a 'substitute burger.' This hasn't really been much of a problem though because I love soy burgers - especially Morningstar Farms Veggie Tomato and Basil Pizza Burger . As my dad and I were walking through Trader Joe's food store, we saw Salmon Burgers. I was intrigued - why had I never tried these before? Salmon has a strong characteristic taste which people either really love or hate. I, of course, LOVE salmon.
The salmon burgers that we got were 'ready to cook' and already seasoned. A look at the ingredients label revealed added caramelized onion, natural hickory seasoning, garlic, herbs etc. (There was also another type of salmon burger that didn't have any seasoning). The cooking directions revealed that these salmon burgers would take only about 15 - 20 minutes to prepare. The directions read: Skillet - Spray pan with a cooking spray (or use a non stick pan). Cook over medium to medium-high heat for 3-4 minutes per side. That's it! Just make sure the center gets hot, which in reality took about 5-7 minutes per side.
