Amys Vegetable Lasagna

Amys Vegetable LasagnaWhen I was in the mood for a home cooked comfort meal, but not in the mood to actually cook, I went on a search through my freezer and found Amy's Vegetable Lasagna - not to be confused with Amy's Tofu Vegetable Lasagna (which was previously reviewed) - yes we don't understand why have 2 different products that are essentially the same thing either.

I stuck mine in the microwave for 6 minutes and it was perfect! After removing the plastic covering, I was enticed by the crispy edges and pungent red sauce. Unfortunately, a blob of mozzarella cheese was melted in the middle of the dish and when I tried to eat it, the stringy cheese came off in one fork full. After plucking that off, I dug in! The noodles were perfectly al dente and organic zucchini, spinach, onions, ricotta cheese, etc. was layered throughout. Each bite is smooth from the ricotta, yet full of texture from the vegetables! Unlike the picture on the box, the sauce was only on the top of the pasta and not layered throughout, but each bite was so flavorful that it was not missed! The fact that it is not smothered in sauce or a bunch of gooey cheese is actually very appealing because it allows you to notice each wholesome, organic ingredient on the list.

Boca Chunky Tomato and Herb Meatless Lasagna

Boca Meatless LasagnaAs much as I love you Boca, I must say that this Meatless Lasagna was truly a forgettable experience. I am a big fan of the Boca Meatless Ground Burger, so I was expecting the lasagna, which is made from the ground burger and chunky tomato & herb sauce, to taste pretty darn good. I was very disappointed.

The sauce itself wasn't bad, and probably the best thing about the lasagna. It was very flavorful and didn't have an overpowering tomato paste taste. But the pasta was tough and the cheese didn't have any taste at all. despite there being lots of it. Boca could have added spinach or something else to rev up the flavor of the meal.

Amy's Tofu Vegetable Lasagna

Amy's Tofu Vegetable Lasagna is another winner. It is made using organic lasagna pasta, 'mozarella style' soy cheese, zucchini, small bits of tofu, and tomato puree. There is also caesinate which is a milk protein, which is important to note if you are vegan. It is very hard to describe the taste of lasagna, but Amy's Tofu Vegetable lasagna tasted like most other lasagnas that I have had, whether they were vegetarian or not.

Lasagna is one of those foods that is not at its best when microwaved because the m'wave has a tendency to heat things unevenly. Since lasagna is quite a few inches thick and you cannot stir it, you have to heat it for a few minutes longer than other frozen dinners to get the middle hot all the way through. Unfortunately, by the time this happens, the outer edges are usually crusty and look burnt. This is common with all microwaved lasagnas, especially if you are getting a decent portion size. In Amy's vegetable lasagna this was also the case, but it was still quite good. The tomato puree was not overhwelming, and as I have mentioned before, I dislike strong tomato paste taste in my food. I also liked the fact that I was getting at least one serving of veggies from this (if not more). I think what was so good about this is that it will taste good to you whether you are vegetarian or a die hard meat eater.

Michelina's Lean Gourmet Five Cheese Lasagna (Updated)

Lasagna UPDATE: I have previously gushed about Michelina's Lean Gourmet Five Cheese Lasagna which I gave 4.5 out of 5 kisses! It tastes great, is nutritionally good, and cheap! At the time, Michelina's LG lasagna was 220 calories, 5 grams fat, 2 grams saturated fat but 760 mg of sodium. Then thanks to our nutrition savvy commenters and readers - I found out that there is a new label on my favorite lasagna, with 310 calories, 6 grams of fat, 2 grams saturated fat and 650 mg sodium.

I emailed Michelinas and got a response in a few days. They informed me that they have changed their formulation and this resulted in an updated label. In addition, the website which still has the old information is scheduled to be updated some time in the near future because it still has the old nutrition info on it. My only question to Michelinas: Why mess with perfection? Why alter the ingredients of something that tastes so great - to make it have more calories - What were you all thinking? It doesn't really make sense to me.

Michelina's Lean Gourmet Five Cheese Lasagna

Lasagna The first thing I noticed about Michelina's Lean Gourmet frozen meals was the price. Each was only $1.00, and that's pretty hard to beat. I'll be honest, because this product was so cheap, I really wasn't expecting much - just praying that it would at least be edible. Michelina's comes in a carboard container, which seemed on the small side, so I knew there was no way I was going to be able to eat this for dinner. I popped it in the microwave and it was done in 4 minutes. When it came out, I was a bit unimpressed with the plain looking, sort of flat lasagna, but it tasted great! It tastes like home made lasagna, and that sauce may be tomato based, but it didn't have a strong tomato paste taste - which I hate. I was actually scraping the container, eating up the left over sauce.

Lean Cuisine Cheese Lasagna with Chicken Scaloppini

Lean Cuisine Cheese Lasagna I don't have lasagna too often and I haven't before seen a frozen lasagna meal. I really didn't know what to expect. For one thing, I am not a fan of tomato paste. I'm the person who calls the pizza place (the few times that I actually order pizza is what I meant to say, because it's unhealthy and I wouldn't ... okay?!) but the one time in my entire life that I ever ordered pizza, I asked for light sauce. So I was really apprehensive about trying this.

I'm glad I did though because it was delicious. Lean Cuisine says this is meal is 'chicken breast scallopini topped with a robust tomato sauce accented with basil, onion and garlic, served with hand-layered three-cheese lasagna rich with ricotta, romano and parmesan cheeses. But I just call it 'good!' The tomato sauce did not overpower the other flavors like I expected, and the cheeses gave it that extra uumph every time you you got a bite. It was typical good lasagna. Adding the chicken breast made this meal very filling. The breaded chicken was flavorful, but got a bit soggy after being microwaved, but not so much that you couldn't eat it.
