Pesto, Tomato & Avocado Open Faced Sandwich

August is National Sandwich Month and we are sharing our favorite sandwich recipes (almost) daily for the entire month, here at Iateapie.net. Today's sandwich connoisseur is Teri of A Foodie Stays Fit

"I make terrible sandwiches; the bread usually overpowers everything, they are dry, and lack flavor. But once in a while, I get inspiration and a delicious sandwich ensues, like this Pesto, Tomato & Avocado Open-Faced Sandwich."

Pesto, Tomato & Avocado Open-Faced Sandwich

I have a feeling this sandwich will be making repeat appearances in my kitchen.

    INGREDIENTS (makes 1 serving)
  • English Muffin (1/2 - Ezekiel english muffins are, hands down, my favorite)
  • Monterey Jack or Mozzarella Cheese (3 slices)
  • Tomato slices (2)
  • Pesto (1-2 tsp; click for the recipe)
  • Avocado slices (1-2)
  • Pesto, Tomato & Avocado Ingredients DIRECTIONS
  • Toast your English muffin.
  • Top with the cheese slices followed by the tomato and pesto
  • Pesto, Tomato & Avocado Ingredients
  • Lastly, top with avocado and a little freshly ground pepper and salt.
  • Savor bite by bite.
