Orzo Pasta Salad

While I was visiting the Thermador mothership in Arizona earlier this week, Chef Kyle prepared a delicious Orzo Pasta Salad, and the recipe just had to be shared.

First off, I must say that I don't think Chef Kyle used whole wheat orzo pasta, but we're all about the wheat around these parts, so I searched for a brand that had gotten good reviews. Looks like Rice Select Whole Wheat Orzo has gotten a very favorable review from Roni of Roni's Weigh and cookbook author, Robyn Webb, so that's my substitution Chef Kyle :-)

Orzo Pasta Salad Recipe
Orzo Pasta Salad (Thermador)

    INGREDIENTS
  • Orzo cooked al dente (1 lb.)
  • Carrot, very finely diced (1 single)
  • Red onion, finely diced (1 single)
  • Celery, finely diced (1 stick)
  • 1 clamshell full pear tomatoes, halved
  • Sunflower seeds or pine nuts, toasted
  • Golden raisins (6 ounces)
  • Mint (1/4 cup)
  • Parsley (1/4 cup)
  • Thyme (1 tbsp)
  • White balsamic (3 tbsp)
  • Olive oil (5 tbsp)
  • A squeeze of lemon and lime
  • Salt and pepper (to taste)
  • PREPARATION
  • Combine all ingredients, except for pasta in a large bowl.
  • Fold in pasta.
  • Refrigerate for a day.

This dish is best if prepared a day in advance of eating - which means leftovers will be yummy in your tummy!
